To Not Inhibit The Natural Fruit, Non-ester Producing Yeast Was Selected, And During The 32 Days Of Fermentation The Yeast Was Kept In Suspension With Daily Stirring. This Allowed The Wine To Adopt A Slight Bread Crust Character. A Gentle Oak Component Was Required, So We Selected Only The Finest Grain French Oak Barrels Available. This Has Added A Character Than Can Be Described As Nutty, Cashewy, Dried Fruit; Some Will Also See Slight Liquorice.

The Winery Has Been Built Into The Hillside And Reflects The Natural Shape Of The Terrain. Without The Need For Pumps, We’re Able To Let Gravity Do A Lot Of The Work. This Saves Energy, And Treats The Fruit More Gently, Which Is Always Good News For The Wine We Make. It Also Means Our Winery Is A Naturally Cooler Space, With Less Need For Air Conditioning To Develop The Quality Of Our Wines.

The Wood You’ll See Inside - Our Tasting Bar, Our Restaurant Tables And The Detail Around The Building - Has All Been Selected From Our Estate.
